芥蓝有苦味,炒时加入少量白糖和酒,可以改善口感。
芥蓝梗粗,不易熟透,炒制时水分挥发较多,所以炒制时应多加些水。

★ 芥蓝中含有有机碱,这使它带有一定的苦味,能刺激人的味觉神经,增进食欲,还可加快胃肠蠕动,助消化。
★ 芥蓝中另一种独特的苦味成分是金鸡纳霜,能抑制过度兴奋的体温中枢,起到消暑解热的作用。
